A conventional mousse can't do without eggs, cream and butter. And that's supposed to be vegan? Yes, it can. And it's even a lot healthier than the animal-based version - even if that's not necessarily the claim for desserts.

Oh my God! What a chocolate dream!

Secret ingredient silken tofu

Silken tofu is softer than tofu as it contains considerably more water. It is made from soya milk and is not pressed like tofu. Due to its soft consistency and hardly any flavour of its own, it is ideal as a substitute for quark or cream and can be used in many different ways in the kitchen.

Preparation time: approx. 15 min

Ingredients for 6 people

  • 400 g silken tofu
  • some agave syrup
  • 200 g dark chocolate

Optional for the decoration:

  • Cocoa nibs
  • Grated coconut
  • flaked almonds
  • Mint
  • Edible flowers

Preparation 

Place the silken tofu and agave syrup in a bowl and blend briefly with a hand blender.

Melt the dark chocolate in a hot water bath.

Now add the melted chocolate to the silken tofu and blend everything well to create a smooth cream. If necessary, scrape off the edges again with a spatula and mix everything together well.

Either place in a nice bowl or divide directly into dessert glasses. Now decorate with your favourite toppings, place in the fridge for at least 2 hours and then serve.
