Nice and soft, juicy, with fruity-sweet jam in between - yam yam yam!!!
Tastes vegan just "like the original"
So get your moulds ready and let's go!
Cooling time: approx. 1 h
Baking time: approx. 10 min
Ingredients for approx. 40 biscuits
- 400 g wheat flour
- 100 g sugar
- 1 sachet vanilla sugar
- 1 grated lemon peel
- 50 g ground almonds
- 200 g vegan butter (e.g. Alsan)
- 4 tbsp almond milk
- 200 g strawberry jam
- Icing sugar for dusting
Preparation
Then knead in the vegan butter and almond milk.
Cover and chill the dough for 1 hour.
Preheat the oven to 180 °C.
Line a baking tray with baking foil.
Dust the worktop with a little flour. Roll out the dough to a thickness of 3 mm and cut out biscuits using a larger and a smaller mould.
Place the biscuits on the baking tray and bake for approx. 10 minutes. Leave to cool.
Mix the jam with a spoon. Spread 1 teaspoon on each of the larger biscuits. Then place a smaller biscuit on top and press together lightly. Dust with icing sugar. Done!
It is best to store the biscuits in a tin, as they will keep for some time.
