I loved them as a child and still do today! Like just about every biscuit, these fulfil the cliché that fat with simple carbohydrates just tastes great... :)))

Nice and soft, juicy, with fruity-sweet jam in between - yam yam yam!!!

Tastes vegan just "like the original"

And thanks to vegan butter, it's super easy to bake this delicious plant-based treat without compromising on flavour!

So get your moulds ready and let's go!

Preparation time: approx. 30 min

Cooling time: approx. 1 h

Baking time: approx. 10 min

Ingredients for approx. 40 biscuits

  • 400 g wheat flour
  • 100 g sugar
  • 1 sachet vanilla sugar
  • 1 grated lemon peel
  • 50 g ground almonds
  • 200 g vegan butter (e.g. Alsan)
  • 4 tbsp almond milk
  • 200 g strawberry jam
  • Icing sugar for dusting

Preparation 

Mix the flour, sugar, vanilla sugar, lemon zest and ground almonds.

Then knead in the vegan butter and almond milk.

Cover and chill the dough for 1 hour.

Preheat the oven to 180 °C.

Line a baking tray with baking foil.

Dust the worktop with a little flour. Roll out the dough to a thickness of 3 mm and cut out biscuits using a larger and a smaller mould.

Place the biscuits on the baking tray and bake for approx. 10 minutes. Leave to cool.

Mix the jam with a spoon. Spread 1 teaspoon on each of the larger biscuits. Then place a smaller biscuit on top and press together lightly. Dust with icing sugar. Done!

It is best to store the biscuits in a tin, as they will keep for some time.
