Mallorcan almond cake (from Villa Vegana)

I like it simple and delicious. And this cake from Villa Vegana* epitomises this perfectly! It can be mixed together in no time at all and the oven does the rest.

Soooo easy and quick to conjure up - it's fun!

And the combination of almonds and lemon brings that exotic holiday feeling straight to your tongue.

So, here we go!

Preparation time: approx. 15 min

Baking time: approx. 50 min

Ingredients for a 24cm diameter springform tin

  • 100 g almonds, chopped
  • 150 g almonds, ground
  • 200 g spelt flour
  • 100 g cane sugar
  • 1 pinch of salt
  • ½ tsp cinnamon
  • 1 teaspoon bourbon vanilla
  • 2 tsp baking powder
  • 130 g Alsan
  • 400 ml almond milk
  • 80 g almond butter
  • Zest of 1 lemon
  • Icing sugar for dusting

Preparation 

Place the almonds, spelt flour, cane sugar, salt, cinnamon, vanilla and baking powder in a bowl and mix together.

Melt the Alsan in a small pan. Add the almond milk, almond butter and lemon zest, stir and mix into the dry ingredients.

Preheat the oven to 160° C (fan oven).

Grease a springform tin or line with baking paper and pour in the dough.

Bake for approx. 50 minutes on the middle shelf.

Leave to cool completely and then dust with icing sugar.
