Baking time: approx. 10-12 min
Ingredients for approx. 15 cookies
- 330g rolled oats
- 120g spelt flour
- 60g icing sugar
- 110g cane sugar
- ½ tsp baking soda
- 1 pinch of salt
- 115ml coconut oil
- 2 tsp bourbon vanilla
- 200g dark chocolate drops
- 1 tbsp chickpea flour
- 2 tbsp water
Preparation
Place all the ingredients except the chocolate chips in a large bowl and knead well. Then add the chocolate chips and knead in.
Now shape the cookies with your hands. Take approx. 1 tbsp of dough at a time and press firmly into a flat ball.
Line a baking tray with baking foil and arrange the biscuits on it.
Bake in the oven for 10-12 minutes.
Don't be surprised - the biscuits will still be relatively soft, but will become firmer as they cool.
The biscuits can be stored in a tin for approx. 1 week (as long as there are enough 😉 )
Eat it straight away!
