Vegan Kaiserschmarrn

Since we've gone vegan and still like to go on skiing holidays, it's sometimes really hard at the huts when such a fragrant typical Austrian "egg dish" is carried past us. Because I love this fluffy, baked pastry with apple sauce. I actually had real food envy back then!

Honey, when we get home, I want to try vegan Kaiserschmarrn.

So I went straight home to try it out and what can I say - Kaiserschmarrn works really well without any animal products such as eggs or milk. You may not believe it, but it does. And it turns out just as fluffy and delicious as "the original". The mineral water and baking powder do the trick.

It couldn't be simpler

And then the whole thing really isn't rocket science. It doesn't need any fancy ingredients and can be prepared in no time at all. So, lovelies - quickly mix everything together and into the pan. It's going to be good!
Preparation time: approx. 30 min

Ingredients for 2 portions

  • 200 ml soya milk (or any other plant-based milk that suits your taste)
  • 140 g spelt flour
  • 80 ml mineral water
  • 30 g brown sugar
  • 1 tbsp vinegar
  • 1 tbsp baking powder
  • 1 pinch of salt
  • Margarine for baking

Preparation 

Place all the ingredients in a bowl and mix with a whisk to form a smooth batter.

Heat a pan, pour in some margarine, allow to melt and then pour half of the batter into the pan and allow to set.

When the dough has completely set, divide into four pieces and turn over. Tear into smaller pieces with a wooden spoon and bake until golden brown on all sides.
