Bircher muesli with sprouted grains

For a long time I didn't dare to try such "exotic" things as sprouting my own seeds. But when I finally gave it a try, I wondered what had put me off for so long. All you need is untreated, sprouted grain, a little water and 3-5 days of patience and you have sprouted grains that are really tasty and provide your body with great nutrients.

This combination is simply heavenly!

Preparation time (germination): 4-5 days

Ingredients for 4-6 portions

  • 80 g untreated rye grains
  • 80 g untreated spelt grains
  • 150 g apple, coarsely grated
  • 150 g pear, coarsely grated
  • 120 g grapes, halved
  • 300 g plant-based yoghurt (e.g. soya yoghurt, coconut yoghurt)
  • 50 g nuts (e.g. walnuts, cashews, etc.)
  • 10 g sunchokes, whole
  • 30 g sultanas, whole
  • 15 g goji berries, whole
  • ½ Vanilla pod, scraped out
  • 15 g agave syrup
  • 120 g orange juice

Preparation 

To germinate the grain, leave the grains to soak for 24 hours. Then rinse twice a day with fresh water until they germinate (this takes approx. 3-4 days).

Once the grain has sprouted, mix all the ingredients together and ideally leave to infuse in the fridge for 1 hour.

When serving, simply check the consistency again and add a little more yoghurt or orange juice if necessary.

Storage

The Bircher muesli will keep for about 2 days in the fridge.
